Legumes & Other Starches

Some of the food groups excluded in a strict Paleo diet have an important role to play in maintaining a healthy gut microbiome – particularly the resistant starch found in white rice and potatoes. Once your gut is ready, these Paleo Plus recipes can be used to gently reintroduce legumes, potatoes and other sources of starch that are difficult to digest when the body is under stress. Most recipes involve slow cooking, as this does most of the work of breaking down complex starch molecules.
