Salads embrace the beauty and vitality of fresh fruit and vegetables, in their natural state. Banish the boring image of limp iceberg lettuce languishing at the bottom of a bowl – a good salad bursts with colour, flavour and texture. Because the ingredients are generally not cooked, this preserves more of the nutrients and enzymes that get broken down and destroyed when food is heated. However, this also means that raw food is harder to digest, so go easy on the salads if you have a chronic digestive disorder.
